Like most parents, I am always on the hunt to find fun and creative ways to pack in healthy food for my family.
I came up with a fun way to combine breakfast with dessert– and no it isn’t donuts. It is based on the recipe here however I made a few changes to make it for breakfast.
This recipe is made with Wild Blueberries. Wild Blueberries are smaller than regular blueberries making them perfect for adding to freezer pops. Wild Blueberries also have a more intense flavor that is a mix of tart and sweet. Wild Blueberries are packed with goodness for your family and have two times the antioxidant capacity of the larger cultivated blueberries. A growing body of research shows the potential health benefits of Wild Blueberries including gut health, diabetes, cancer, and brain health. And since Wild Blueberries are frozen fresh at harvest ensuring that their nutrition and taste are locked in. You can find wild blueberries in your freezer section at your local grocery store.
Wild Blueberry Breakfast Pops
POP BASE
5 ounces vanilla Greek Yogurt
1/3 cup low fat milk
4 tablespoons lemon juice
2 tablespoons agave nectar
1/2 cup wild blueberries
POP GARNISH
¼ cup wild blueberries
4 teaspoons of Granola
MAKE THE POP BASE
Using a blender, mix together the 1/2 cup blueberries, yogurt, lemon juice, vanilla, milk, and agave until smooth.


ASSEMBLE THE POPS
I used a Zoku Quick Pop Maker to make these freezer pops, however this recipe will work with any popsicle mold, or ice cube tray.
Pour pop base filling cavity ¼ of the way full. Spoon in about 1 teaspoon blueberries. Pour lemon base on top of blueberries filling each cavity until 2/3 of the way full. Add in a few more blueberries, and Granola, and continue adding the pop base until just below the fill line. Sprinkle Granola into the cavities and press them gently with your fingertips.
Let freeze completely.
SERVE
Serve for breakfast along side granola. Also makes a great snack or dessert.
My three-year-old son was THRILLED to be able to eat a popsicle for breakfast.
