Because I am on a dairy and soy free diet due to Kodi’s allergies, I get asked all the time what do I eat. I eat just like you, but with no dairy and not soy. It was not easy at first, I LOVE mexican food and pizza, but it really has not been that hard to manage. The biggest restriction has been eating out but I have managed to find places I can eat. And of course not eating out mexican food!
Like I mentioned I LOVE mexican food. Here is my favorite at home recipe for chicken tacos. What makes this recipe even better is it cooks itself- yup love the crock pot!
Shredded Chicken Tacos
1 lb chicken, skinless and boneless
2 TBS Penzeys Chicken Taco Seasoning
1 TBS Lime
1/2 cup chicken broth, low sodium
Add Penzeys Chicken Taco Seasoning, Lime and Chicken broth to crock pot. Stir together. Add Chicken. Cook on Low 6-8 hours (You can also cook on high for 4 hours). Chicken is done when chicken easily shreds apart.
Shred chicken. Keep the broth that it cooked in, and stir that back into the shredded chicken.
Serve in taco shells. I use Old El Paso Taco Shells since they are soy and dairy free.
Top with lettuce, and salsa.
Tip: I usually double or triple this recipe and freeze.
